Dum Aloo (Fried Potato in fennel sauce)


Ingredients...................................

  1. Boiled potato small- 5-6
  2. Onion large- chopped-1
  3. Tomato puree- 3tsp
  4. Green chili chopped- 1
  5. Grated ginger- 1tsp
  6. Grated garlic-1tsp
  7. Turmeric pwd- 1/4tsp
  8. Red chili pwd- 1/2tsp
  9. Garam masala pwd- 1/4tsp
  10. Coriander pwd- 1sp
  11. Curd- 2tsp
  12. Salt to taste


Spices crushed.........................
  1. Fennel seeds- 1tsp
  2. Cloves-4
  3. Black cardomom- 2
  4. Green cordomom- 2
  5. Black peppers- 6-9
  6. Cenemom -1/4inch
Method.....................................
  • Make a crushed  powder by blender, and keep a side, Remove the peel from boiled potato not too soft,prick them.
  • Heat the wok, pour oil after 1/2 min add potato and fry golden brown and keep aside, now add onion, ginger, garlic and fry till golden brown, now add crushed spices, again fry for 1/2 min.

  • Now add garam masala, salt, tomato,turmeric pwd, coriander pwd,  red chili pwd fry for 5 second, now take out in mixer and make a fine paste, put back the paste again in wok add water, curd and fried potato, cover the lid and cook 10 min on low heat.

  • Dum Aloo is ready to serve.
