Bread Rolls




Ingredients..............................

  1. Fried Potato- 1cup link is http://noopurnikhil.blogspot.com/2010/12/potato-puff-patties.html
  2. Bread- 6-7
  3. Oil- 50ml
  4. water- 1bowl
Method...................
  • First cut the sides of bread, now take sprinkle some drop of water on bread slice and drain it carefully.

  • Now it looks wet, pour potato mixer and fold it like a slender shape .


  • Heat the wok, pour oil after 1min add bread roll slowly on low medium heat and fry till golden brown.

  • Bread Roll is ready to eat.

Lamb Do Pyazza (Lamb Onioniy)



Ingredients....................

  1. Lamb- 500gm
  2. Onion- 1kg sliced or chopped
  3. Garlic- 6-7
  4. Bayleafe- 2-3
  5. Black pepper- 15-20
  6. Black cardomom crack- 2-3
  7. Green cardomom- 3-4
  8. Cloves- 5-8
  9. Red whole chiili-3-4
  10. Cinemom Sticks- 2inch
  11. Starnise- 1
  12.  Mace(Javitry)- 2inch
  13. Nutmeg (Jayafal)- 1/2tbsp
  14. Ginger- 3tnch
  15. Salt to taste
  16. Red chili pwd- 1tbsp
  17. Turmeric pwd- 1/2 tbsp
  18. Mustard oil- 15 tbsp

Method.....................
  • First make a smooth paste of jayafal (nutmeg), javitri(mace) and ginger and keep aside.
  • Heat the oil after 2second add bay leaf, cumin seeds, cinemon sticks, black pepper, green black cardamom, garlic, and fry them 3 second, now add red whole chilli , after 1second add onion sliced and raw lamb fry it 3min. now add turmeric pwd, red chili pwd and salt fry again 3 min.

  • Now cover it and cook for 10 min or 5 whistle........now switch off the gas and let it cool for 15 min, you should check the tenderness of lamb using fork /toothpick, meat should be semi cooked, now fry it at a low medium heat after 2 min pour nutmeg, mace and ginger paste and mix them well and fry  for about 30 min, when gravy turns thick and shiny it  means that the lamb do pyaaza  (Lamb Onioniy)is ready to serve.

Rice Flour Kachori




Ingredients.............................


For Dough..................

  1. Rice flour- 300gm
  2. Luke warm water- 50ml
For Filling............................
  1. Bengal lentil - 150 gm soak in water overnight
  2. Ginger- 1inch
  3. Cumin seeds- 2tbsp
  4. Garlic- 4-5
  5. Black Cardamom- 1
  6. Black pepper- 14-15
  7. Green chopped coriander- 1tbsp

Method.........................
  • Make a soft dough and cover it with clingfilm and leave it for 10 min.

  • Take a jar add Bengal lentil and other dry spices, make a smooth paste , now add salt ,mix it well

  • Now take a  two small balls , sprinkle flour dust on rolling board and roll them with rolling pin carefully because rice flour dough is very delicate.

  • Now pour 1spoon Bengal lentil paste and spread evenly , now cover it with another rice flat bread and close them carefully.

  • Heat the oil , add rice flour kachori in oil carefully using with spatula , fry from both sides .

  • Rice flour kachori is ready to serve with green chutney.

Momo's Chilli Sauce



Ingredients.............................

  1. Red whole dry chilli- 6-9
  2. Garlic- 6-8
  3. Vinegar- 4tbsp
  4. Salt- 1tbsp
  5. Olive oil- 5tbsp
Method.....................
  • Soak red whole chilli, garlic salt in vinegar about 3-4 hours.

  • Now take jar add oil and soaked red chilli, garlic and make a smooth paste.

  • Momo's sauce is ready to serve

Momos


Ingredients.............

For dough..........
  1. Plain Flour- 200gm
  2. Salt- 1/2tbsp
  3. Oil- 10tbsp
For Filling....................
  1. Chopped cabbage- 1bowl
  2. Chopped onion- 1/2 bowl
  3. Grated carrot- 1/4bowl
  4. Green peas- 1/4 bowl
  5. Sweet corns- 1/4cup
  6. Veg Sausage crushed- 2
  7. Chopped green chilli- 2-3
  8. Ginger garlic paste- 2tbsp
  9. Salt to taste
  10. Turmeric pwd- 1/4tbsp
  11. Garam masala- 1/4tbsp
  12. Oil- 8tbsp

  • For filling.......... heat the wok pour oil after 5 sec add chopped onion, green chilli, ginger garlic paste and fry them after 6 second add grated carrot, green peas, sweet corns, chopped cabbage and mix them, after 1/2 min add salt, turmeric pwd, garam masala pwd and crushed veg sausage and fry till dry and golden brown, let be cool..... Filling is ready

  • Now make a small ball of plain flour dough and roll it approx 2 inch diameter and pour filling in middle and shape them.

  • Now start the double boiler and steam momos about 10 min , take off from boiler .

  • Momos ts ready to serve with sauce.
