Corn Cakes



Ingredients..................................

  1. Sweet corns - 1cup
  2. Boiled potato-1
  3. Chopped onion- 1cup
  4. Chopped green chili- 2
  5. Chopped spring onion- 2tbsp
  6. Red chili pwd- 1tbsp
  7. Coriander pwd- 1tbsp
  8. Salt to taste
  9. Grated ginger- 1tbsp
  10. Plain flour- 2tbsp
  11. Oil- 10tbsp
Method......................
  • Make a semi thick paste of sweet corns using mixer, now take a big bowl add boiled and peeled potato, sweet corn crushed, spring onion, chopped onion, green Chili, ginger, salt, red Chili pwd, coriander pwd and mix them.

  • Now  heat the flat pan, make a small cake, drop some oil on flat pan and place them, fry till golden brown from both sides.

  • Corn cakes is ready to serve.

Sweet potato Ball with Indian sauce (Shakarkand ke kofte)


Ingredients..........................

  2. Onion sliced- 1
  3. Green chili- 2
  4. Ginger- 1inch
  5. Red chili pwd- 1tbsp
  6. Corriander pwd- 1tbsp
  7. Garam masala- 1/4tbsp
  8. Salt to taste
  9. Turmeric pwd- 1/2tbsp
  10. Chopped tomato- 1/4can
  11. Tomato ketchup- 3tbsp
  12. Oil- 7tbsp
Method..........................
  • Heat the wok ,pour oil after 3second, add sliced onion, ginger, green chili, cumin seeds, fry about1/2 min, add coriander pwd, garam masala, salt, turmeric pwd, red chili pwd and chopped tomato, mix them.

  • Now add tomato ketchup, mix it and pour all mixer in mixer, and make a smooth paste, then pour in wok again and add some water and cook for 1min and place the sweet potato balls and cover from the lid after 1/2 off the heat.


  • Sweet potato Ball with Indian sauce (Shakarkand ke kofte) ia ready to serve.



Battered Chicken Drumstick Fried



Ingredients.....................

  1. Chicken drumstick-4
  2. Plain Flour/ Self Raising Flour- 5tbsp
  3. Salt to taste
  4. Black pepper- 1tbsp
  5. Red chili pwd- 1tbsp
  6. Baking Pwd- 2pinch
  7. Water- 20tbsp
  8. Dried Thyme- 1.4tbsp
  9. Oil for fry- 1cup
Method...........................
  • Take a big pot, pour water, 3cup add chicken washed drumstick and boil them 5-10 min medium heat.

  • Now off the heat take off the chicken drumstick  and keep  aside, make a smooth paste of plain flour, salt, baking pwd, black pepper, red chili pwd , water and dried thyme, mix them gently .

  • Now take a plate put 3tbsp plain flour, heat the oil for fry, and first sprinkle some salt and black pepper on chicken then after roll and cover the cooked chicken evenly in plain flour, now secondly put the chicken in flour spiced battered, make sure, cover all over on chicken and drop in hot oil , fry till golden brown.

  • Battered Chicken Drumstick Fried is ready to serve.


Black Chickpeas fried



Ingredients...................

  1. Black chickpeas- 100gm
  2. Oil for fry- 200gm
  3. Chopped onion- 1/2
  4. Chopped reddish/mooli- 4tbsp
  5. Chopped green chilli- 1
  6. Coriander fresh- 2tbsp
  7. Salt to taste
  8. Lemon juice- 1tbsp
  9. Red chili pwd- 1/4tbcp (optional)
Method..........................
  • Heat the the wok , pour oil after 1/2 min , add black chickpeas and fry them high heat, heat should be high for frying chickpeas, stir continuously, now you can see some crackups on chickpeas that means chickpeas has done, take off them in another vessel, and off the heat.

  • Now add chopped onion, chopped reddish, chopped green chilli, salt, coriander and lemon juice , toss them and black chickpeas is ready to serve.


Sweet Potato Balls



Ingredients.........................

  1. Sweet potao boiled-2
  2. Potato boiled-1
  3. Coriander fresh-2tbsp
  4. Salt to taste
  5. Roast gram flour- 5tbdp
  6. Coriander pwd- 1tbsp
  7. Red chili pwd- 1tbsp
  8. Grated ginger- 2tbsp
  9. Garam masala-1/4tbsp
  10. Chopped onion-1
  11. Chopped green chili- 2
  12. Oil for fry
  13. Plain flour- 5tbsp

Method.........................
  • Peeled the sweet potato  and potato and mix them with coriander, ginger, salt, garam masala, coriander pwd, red chili pwd, chopped onion and roast gram flour

  • Now make a small balls and cover them in plain flour.


  • Heat the wok, pour oil after 1/2 add balls and fry till golden brown, sweet potato balls is ready to serve.

Canapé Ladder


Ingredients....................
  1. Yellow lentil- 200gm soaked in water  for 2hour
  2. Garlic- 2
  3. Ginger-1inch
  4. Plain flour- 3tbsp
  5. Salt to taste
  6. Oil for frying- 5tbsp

For Presentation............
  1. Green bell pepper diced- 1/2 
  2. Red bell pepper diced- 1/2
  3. Carrot peeled and cut into round- 2
  4. Orange-1
Method..................
  • Make a smooth paste of soaked lentil, garlic, palin flour salt and ginger, using mixer.

  • Heat the flat pan drop some oil and place the  lentil batter in round shape, cook from both sides light brown, take off from the heat.

  • Now presentation , take a skewer first push the cooked canape, second green bell pepper+carrot+red bell pepper, again push cooked canapé and repeat as before, now take a orange and place canapé ladder skewer on it

  • Canapé ladder is ready to serve

Mini Soya Pies




Ingredients..................

  1. Shortcrust pastry dough-1
  2. Minced soya- 1cup
  3. Chopped onion- 1
  4. Chopped green chili -1tbsp
  5. Salt to taste
  6. Red chili pwd- 1/4tbsp
  7. Corriander pwd- 1/4tbsp
  8. oil for fry- 2tbsp
  9. Chopped tomato- 2tbsp
  10. Mozzarella cheese- 20gm
Method........................
  • Pre heat the oven 200oc, take a shortcrust pastry dough and roll it approx 5inch diameter , and cut the pastry from a bowl circle shape, now take a muffins tray and place the circle shape shortcrust pastry and press lightly, frisk pastry base with fork.

  • Now place the pastry in oven for 10 min., now remove from oven and cool on wire rack.

  • Heat the wok , pour oil add 2tbsp oil after 2second add chopped onion, green chilli and mince soya and fry them, after 3 second add red chili pwd, corriader pwd ad salt, and chopped tomato mix them again and cover for 5 second .


  • Open the lid, stir for 5second and switch off the gas and leave for cool.

  • Now fill the pastry with soya mixture and put some mozzarella cheese on it , pre heat the oven 180oc and place he pies for 5 min. take off the pies and cool on wire rack.

  • Mini Soya Pies is ready to serve.
