- Dates, pitted and chopped - 100gm soaked in rum about 2-3 hours
- English walnuts, coarsely chopped -100gm
- Caster sugar- 200gm
- Baking powder -1tbsp
- Self raising flour -200gm
- Rum-4tbsp
- Vanilla extract- 1tbsp
- Vegetable oil- 5tbsp
- Milk- 5tbsp
Method.................
- Preheat the oven to 150 C / Gas mark 2. Grease and flour a 10cm (2 in) tube cake tin.
- In a large bowl, combine flour and oil together then after add sugar and milk and whisk about 1min
- Now add walnut and date, mix it well then add vanilla extract.
- Bake in the preheated oven for 90 minutes. Let cool in tin for 10 minutes, then turn out onto a wire rack and cool completely.
- Egg less Rum waldate cake is ready to eat
