Ingredients...................
- Aubergine/Egg plant/ Baigan- 1
- Turmeric Pwd- 1tbsp
- Salt - 2tbsp
- Oil- 4bsp for marination
- Oil for fry- 5tbsp
Method..................
- Wash and pat dry the eggplant,Cut into 2" thick pieces and soak in water about 15 min (This will remove the bitter juices)..
- Drain water and pat dry the pieces with a paper towel, Now take a plate- pour oil, salt and turmeric powder mix it well, and code evenly on the pieces, leave it for 10 Min
- Heat a flat pan on medium heat, spray some cooking oil, now place the aubergine pieces on it.
- Cook till it browns. Spray a little cooking oil spray and sprinkle the salt-turmeric mixture on the other side. Change sides and cook till the side is brown. Serve hot and enjoy !
- Fried Aubergine/ Egg Plant (begun bhaja) is ready to serve.
