Scrambled Eggs with Vegetables - Egg Bhurji

Ingredints..............
  • Vegetable oil-4 tbsp
  • Raw Egg-2
  • Chopped Onion-1/2 bowl
  • Chopped green chili-1
  • Chopped Bellpepper-1/2 bowl
  • Chopped Carrot- 4tbsp
  • Chopped Tomatoes-1.2 bowl
  • Turmeric Powder-1/2 tbsp
  • Salt to taste
  • Corriander Leaves
Method.................
  1. Heat 2 tbsps vegetable oil in a vessel, add finely chopped onions and chopped green chillis and saute for 3 mts.
  2. Add few tbsps of finely chopped mixed vegetables (bell peppers, tomatoes and carrots) and a pinch of turmeric pwd.
  3. Saute further for another 3 mts.
  4. Break eggs into the vessel and combine with the rest of the mixture.
  5. Place lid and cook on low flame for 3-4 mts.
  6. Remove lid and combine again.
  7. Scramble the mixture for another 3-4 mts.
  8. Season with salt and garnish with coriander leaves.
