Finger Sandwich



Ingredients........................

  1. White bread- 4 slices
  2. Tomato sauce- 2tbsp
  3. Cucumpber round slices- 5-6
  4. Tomato Round slices- 5-6
  5. Carrot for presentation
  6. Onion slices- 5-6
  7. Boiled potato Slices- 5-6
  8. Black pepper powder- 1/2 tbsp
  9. Salt- 2pinch
Method...............
  • Trim sides of each slice of bread and divide in 4 square pieces, Set aside
  • Now spread tomato sauce on bread square pieces, and place cucumber slices and tomato slice

  • Now place another square tomato spreadable bread piece on it, add again place onion slices and boiled potato slice, sprinkle pinch of black pepper and salt and cover it finally another bread square tomato spreadable pieces.



  • Finger sandwich is ready to eat.

Fried Aubergine/ Egg Plant (begun bhaja)



Ingredients...................

  1. Aubergine/Egg plant/ Baigan- 1
  2. Turmeric Pwd- 1tbsp
  3. Salt - 2tbsp
  4. Oil- 4bsp for marination
  5. Oil for fry- 5tbsp
Method..................
  • Wash and pat dry the eggplant,Cut into 2" thick pieces and soak in water about 15 min (This will remove the bitter juices)..

  •  Drain water and pat dry the pieces with a paper towel, Now take a plate- pour oil, salt and turmeric powder mix it well, and code evenly on the pieces, leave it for 10 Min  
  • Heat a flat pan on medium heat, spray some cooking oil, now place the aubergine pieces on it.

  •  Cook till it browns. Spray a little cooking oil spray and sprinkle the salt-turmeric mixture on the other side. Change sides and cook till the side is brown. Serve hot and enjoy !

  • Fried Aubergine/ Egg Plant (begun bhaja) is ready to serve.

Plum Jam With Vanilla Ice cream- Strawberry syrup



Ingredients................

  1. Vanilla ice cream- 3 scoops
  2. Strawberry syrup-2bsp

Method..................
  • First pour 1scoop of vanilla ice cream
  • Next plum Jam/Dessert 1tbsp, now pour 1tbsp strawberry syrup
  • Continue this process again
  • Plum Jam With Vanilla Ice cream- Strawberry syrup is ready to eat

Mashed Potato Relish (Aloo bharta)



Ingredients.............

  1. Boiled potato-3
  2. Salt to taste
  3. Mustard/olive oil- 1-1/2tbsp
  4. Chopped onion- 1
  5. Chopped garlic- 3
  6. Chopped tomato- 1
  7. Chopped ginger- 1tbsp
  8. Chopped green chili- 1
  9. Chopped coriander leaves- 2tbsp
  10. Lemon juice- 1tbsp
Method...................
  • Peeled the boiled potato and mashed it.

  • Now add all rest ingredients and mix well, that's it

  • Mashed Potato Relish is ready to serve.


Fried COLOCASIA (fried arvi, ghuiyaan)



Ingredients....................

  1. Colocasia/Arvi/Ghuyaan-200gm
  2. Oil- 4tbsp
  3. Chili flacks- 1/2 tbsp
  4. Chopped coriander- 2bsp
  5. Salt to taste/ rock salt
  6. Cumin Seeds- 1/2tbsp


Method..................
  • Boil the colocasia about 10 min or 3whistle , let it be cool and peel it.
  • Now heat the wok pour oil and add cumin seeds, chili flakes, fresh chopped coriander and fry about 1min then add diced colocasia and sprinkle salt , fry it about till light brown .

  • Colocasia fried is ready to serve.

Whole Brown Chickpeas salad (kale chana ka salad)



Ingredients.................

  1. Brown shield chickpeas- 1cup, soaked in water about 6 hours
  2. Chopped onion- 1/4 cup
  3. Chopped tomato- 1/4 cup
  4. Oregano- 1tbsp
  5. Salt to taste
  6. Boiled potato- 1/4 cup
  7. Green chopped chilli- 1
  8. Thinly chopped garlic- 1tbsp
  9. Black pepper- 2pinch
  10. Lemon dressing- 1/2tbsp
  11. Olive Oil- 1tbsp
Method....................
  • Heat the flat pan pour soaked brown chickpeas and semi cook.

  • Now mix all ingredients with semi cooked chickpeas.

  • Enjoy brown chickpeas salad.

Kadhi (Balls in sour sauce)


Ingredients......................

For Balls...........................
  1. Chopped onion- 4tbsp
  2. Ginger paste- 1tbs
  3. Red chili powder- 1/2 tbsp
  4. Garam masal - 1/4 tbsp
  5. Green chili- 2
  6. Gram flour- 1cup
  7. Water - 1/4 cup
  8. Salt -2pinch
  9. Oil- 1cup for deep frying
For Sauce.....................
  1. Gram flour paste- 4tbsp +100ml water
  2. Salt to taste
  3. Tomato- 1/2 chopped
  4. Curd- 1/2 cup
  5. Chopped onion- 4tbsp
  6. Green chili chopped- optionals
  7. Red chili powder- 1/4 cup
  8. Turmeric pwd- 1/2 bsp
  9. Coriander- 1/2tbsp
  10. Lemon -2bsp
  11. oil- 5 tbsp
  12. Water- 300ml
Method.................

Making Balls.................
  • Take a big bowl transfer o all ingredients and make a smooth batter, it shouldn't be thin or more thick.
  • Heat the wok pour oil and drop 1 spoon batter in oil and fry till golden brown both sides.
  • Off the heat and transfer the balls in anther vessel and leave it.



Making Sour Sauce.................
  • You can continue rest oil , heat the wok again pour oil after 3 seconds, Add chopped onion, green chili, chopped tomato, ginger paste, all dry spices and salt , fry it about 1min .
  • Now add curd and gram flour paste and mix it well.
  • Then add 300ml water and stir continuously, cook about 10 min. if you want you can pour more curd.
  • After 10 min when one boil is coming up, pour the balls and cook again 5min , off the heat
  • Kadhi(Balls in sour sauce ) is ready to eat.

Plain-flour Wraps



Ingredients................
  1. Plain flour- 100gm
  2. black pepper- 1pinch
  3. Chili sour sauce- 2tbsp
  4. Shredded cabbage- 1/2 cup
  5. Chopped tomatoes- 3tbsp
  6. Chopped onion- 3tbsp
  7. Salt to taste
  8. Desiccated coconut Optional- 1tbsp

Method................
  • Make a smooth paste of plain flour using water and salt and black pepper.

  • Heat the wok pour one big spoon of batter/paste and spread it thinly, now pour some drop of oil and make some cuts in between the wraps ,cook low medium heat, and cook both sides.


  • Now spread chili hot sauce on the wrap and spread desiccated coconut , shredded cabbage, onion and tomato, you can sprinkle some oregano as well.

  • Now fold it and enjoy the wraps with curd.
