Fried Fish Head In curry


Ingredients.............................


  1. Fish Head-2
  2. Grated onion- 1/2cup
  3. Grated ginger- 1/2tsp
  4. Turmeric pwd- 1/2tsp
  5. Cloves-2
  6. Mace-1/4tsp
  7. Bay leaf-1
  8. Green cardamom-2
  9. Salt to tatse
  10. Red chili pwd- 1/2tsp
  11. Red whole chili-1
  12. Chopped fresh corriander- 2tsp
  13. Tomato chopped- 1/2
  14. Tamarind paste- little bit
  15. Mustard oil- 6tsp


Method....................................

  • Wash -fish head properly and remove fish gill, heat the wok, pour oil and place fish head and fry till light brown.


  • Now take out the fish pieces and , add red whole chili,bay leaf in rest oil and fry after 1/2min,add grated onion, ginger and fry for 2min. now add dry spices and chopped tomato, tamarind paste, fry again for 4 min low medium heat.


  • Now place fried fish head and mix them properly, fry for 1 min, now add water 1/2 cup and cover them from the lid and cook for 1+1/2 min. off the heat.




  • Fried Fish Head In curry is ready to serve.

Shreded chicken with pasta for kids


Ingredients..................


  1. Boiled and shred-ed chicken- 1/2cup
  2. Vegetable whatever you like-1/cup
  3. Salt to taste
  4. Black Pepper pwd- 1/2tsp
  5. Sliced onion-1/4cup
  6. Oil-4tsp
  7. Soy sauce- 2tsp
  8. Minced ginger- 1/2tsp
  9. Minced garlic-1/2tsp
  10. Boiled pasta-1cup

Method..............................

  • Heat the wok, pour oil add ginger, garlic and sliced onion cook for 1/2 min or till golden brown.

  •  Now add pasta, shreded chicken and vegetables, slat, black pepper pwd and fry for 1/2min.


  • Now soy sauce mix them properly, cover the lid low medium heat and cook for 1 min.

  • Shreded chicken with pasta is ready to serve.

Besan Stuffed Kachori- Gram powder stuffed Bread



Ingredients..........................................

Stuffing........................


  1. Gram flour- besan- 1cup
  2. Oil-4tsp
  3. Fenugreek seeds- 1/2tsp
  4. Fennel Seeds- 1tsp
  5. Onion seeds- 1tsp
  6. Crushed chilli-1tsp
  7. Salt  to taste
  8. Water-4tsp

Dough..........................

  1. Self raising flour- 1cup
  2. Oil- 6tsp
  3. Salt to taste

Method......................................

  • Heat the wok add oil after 1/2 min add whole seeds and fry for 10 second now add gram flour and roast for 2min. take out and keep a side for cool. after 5 min add some drop of water and make some moist. other wise stuffing will not stick with dough.



  • Take a big bowl add flour , salt,oil and rum properly and knead dough using water , dough should be soft, cover it and keep a side for 1/2 hour.


  • Take small piece of dough like lemon size and roll them1/2 incg diameter and pour 1 tsp stuffing and seal them carefully and press them with your palm and roll them 3inch dia meter.



  • Heat the oil low medium heat and place kachories and fry till golden brown from both sides.

Cottage cheese- mushroom Chow-mean for kids


Ingredients................................


  1. Boiled  chow-mean- 1cup
  2. Minced garlic- 1/2tsp
  3. Minced ginger- 1/2tsp
  4. cottage cheese-paneer diced-1/4cup
  5. Salt to taste
  6. Crushed black pepper pwd-1/4tsp
  7. Sliced onion-1/4cup
  8. Soy Sauce- 2tsp
  9. Oil-4tsp

Method........................

  • Heat the wok, pour oil after 1/2 min add sliced onion, ginger, garlic and fry till golden brown now add cottage cheese- paneer- fry till golden brown.

  • Now add sliced mushroom, sprinkle salt and pepper pwd- fry for 1/2 min, now add boiled chow mean and pour soy sauce on top, mix them properly. cook for 1 min.


  • Cottage cheese- mushroom Chow-mean for kids is ready to serve.

Yam Cutlets (Suran Cutlets)


Ingredients...............................

  1. Boiled peeled wahsed yams- suran- 200gm
  2. Roasted gram flour- 4tsp
  3. Slat to taste
  4. Green chili- 2
  5. Chopped grrn corriander- 4tsp
  6. Grated ginger- 2tsp
  7. Grammasla- 1/2tsp
  8. Corriander pwd- 1tsp
  9. Red hcili pwd- 1tsp
  10. Turmeric paste- 1/2tsp
  11. Oilforfry- 1cup

For battered.......................

  1. Rice four- 4tsp
  2. Gramflour- 5tsp
  3. salt to tase
  4. turmeric pwd- 1/2tsp
  5. Red chili pwd- 1tsp

Method..........................

  • Boiled yams with little water and tamrind paste, now Take a big bowl add boiled yams, and add all things and mashed properly.




  • Now make cutlets,make smooth paste of gram flour, Heat the wok,pour oil afte 1min when oil heated , dip cutlets in gram flour battered and drop in oil and fry till golden from both sides.



  • Yams Cutlets (Suran Cutlets)  is ready to serve.
