Achari Chicken (Pickled Wrapped chicken)


Ingredients..........................................


  1. Chicken washed and semi cooked- 250gm
  2. Julian ginger- 1tsp
  3. Mustard paste- 1/2tsp
  4. Green chili- 1
  5. Grated garlic- 1tsp
  6. Mustard oil- 5tsp
  7. Turmeric pwd- 1/2tsp
  8. Coriander pwd- 1tsp
  9. Salt to taste
  10. Five seeds- (fennel seeds- 1/2tsp+ onion seeds- 1/4tsp+Fenugreek seeds- 1/4tsp+Mustard seeds- 1tsp+Cumin Seeds- 1/2tsp)


Method...................................

  • Hat the flat pan, place all dry seeds and roast them till get aroma or 1min low medium heat, take out and crushed them- keep aside.



  • Now heat the oil add ginger, bvgarlic and green chili fry them for 10 second, now add semi cooked chicken, turmeric pwd, coriander pwd, salt and mix them properly.


  • After 1 min, add crushed dry seeds and mix again, cook for 1+1/2min. again, now pour, chicken broth or stock or water, littel bit and cook for 2 min to 5min.




  • Off the heat, takeout the achari chicken, and serve hot .

Amritsari Fish Fritters (Batterd Fish Fritters)

  


Ingredients.......................................


  1. Gram flour- 1/2cup
  2. Rice flour- 3tsp
  3. Fish fillets- 4
  4. Red chilli flacks- 1tsp
  5. Mustard paste- 1tsp
  6. Salt to taste
  7. Ginger grated- 1tsp
  8. Garlic grated- 1/2tsp
  9. Carom seeds (azwain)- 1tsp
  10. Chaat masala- 1tsp
  11. Lemon juice- 1tsp
  12. Mustard oil- 1cup

Method.....................................

  • Here I amusing Rohu fish,but you can take any fish fillets, wash and marinated with salt and lemon juice ,keep aside for 1/2hour.



  • Take a big bowl add plain  and gram flour and dry spices, salt, lemon juice,  make semi thick paste, heat the wok,pour oil -now take marinated fish fillet place in batter,and fry in oil low medium heat , till golden brown, crisp from both sides.




  • Amritsari Fish Fritters  (Batterd Fish Fritters) is ready to serve, don't forget to sprinkle chat masala on top.

Net Dosai



Ingredients........................


  1. Semolina-1/4cup
  2. Plain Flour- 1/4cup
  3. Rice Flour- 1cup
  4. Grate ginger
  5. Salt to taste
  6. Water- 1cup
  7. Oil- 10tsp

Method.............................

  • Take a big bowl   add all 3flours and add grated ginger + salt,Mix them properly, now add water1cup or according to you.

  • Make watery batter, keep a side for 1/2hour.
  • Now heat the flat pan,now pour 2 ladle of batter, don't worry for shapes  , drop some oil and cook high heat from both sides.






  • Net Dosai is ready to eat.

Burgundy spicy Beet Root


Ingredients.....................................

    1. Raw beetroot grated- 1cup
    2. Yellow Lentil- 1/4cup soaked in water for2hours
    3. Grate ginger- 1tsp
    4. Grated garlic- !/2tsp
    5. Cumin seeds-1/2tsp
    6. Coriander pwd-1tsp
    7. Garam masala- 1/4tsp
    8. Red chili pwd- 1/2tsp
    9. Curry pwd- 1tsp
    10. Frozen peas- 1/4cup
    11. Salt to taste
    12. Turmeric pwd- 1/2tsp
    13. Oil- 6tsp

  1. Method.................................

  • Take a bowl add ginger garlic paste+all dry spices mix them you can use little bit water , keep a side. 

  • Heat the wok, pour oil after 1/2 min add cumin seeds fry till brown , then add spices paste fry till golden brown or 1min.


  • Now add grated beet root +Yellow lentil mix them properly, after 1 min.add green peas and cover from lid and cook for 10min.low medium heat.


  • Open the lid and now stir fry for1 +1/2min.


  • Burgundy Beet Root Masala is ready to serve.


Burgundy Beet with White poach


Ingredients..................
