Sweet Wheat Fritters

Today it's a huge day for me because My Parents's Annyversary........... So I made sweet wheat Fritters and pray to GOD for their good healh.


Ingredients.....................
  1. Wheat flour-1bowl/ 10tbsp
  2. Green cardomom crushed- 1/2 tbsp
  3. Water- 1 cup
  4. Fresh or dry Coconut small pieces- 2 tbsp
  5. Oil for fry- 1 small bowl
  6. Sugar- 1 small bowl/ 9 tbsp
Method..................
  • Mix all ingredients (flour, sugar, cardomom, coconut) well and make a semi thick paste using water, and leave it for 2-3 hours.
  • Heat the wok pour oil, after 1min drop the flour dumplings in hot oil and fry both sides till golden brown.
  • Sweet wheat fritters is ready to eat.

Rasaj (Diamond Flour in Onion Curry)



Ingredients................

Diamond flour......
  1. Gram flour- 1cup
  2. Water- 2 cup
  3. Salt- 1tbsp
  4. Oil- 1 Small bowl
  5. Cumin Seeds- 1/2 tbsp
For Curry............
  1. Onion Paste- 7tbsp (you can see on this link http://noopurnikhil.blogspot.com/2011/02/onion-paste.html)
  2. Coriander powder-1 tbsp
  3. Red chili powder- 1/2 tbsp
  4. Garam masal- 1/2 tbsp
  5. Turmeric Powder-1/2 tbsp
  6. Mango Powder- 1 tbsp
  7. Chopped tomato- 1/2
  8. Sliced Onion- 1 tbsp
  9. Water- 2cup
Method.................

For Diamond Flour.......
  •  Take a large bowl add gram flour, salt ,turmeric powder and 1 cup of water, mix it well and time to time add little water according to consistency and make a very thin paste.
  •  Heat the wok add 4 tbsp oil, cumin seeds when cumin turns brown , pour flour thin paste and fry continuous otherwise can be lumps and cook about 5 min.
  • When it turns like a thick paste drop one spoon paste on greased tray and let it be cool, If it comes easily that means gram flour paste has cooked.
  • Pour the paste in greased tray and evenly spread carefully because it's hot, and leave for 15 min and now cut the pieces in diamond shape.



For Curry.............
  • Again heat the wok pour 7 tbsp oil, add sliced onion, fry about 1 min then add onion paste (you can see my onion paste on this link http://noopurnikhil.blogspot.com/2011/02/onion-paste.html) fry about 4 min low medium heat.
  • Now add diamond flour and fry about 2 min then add 1 1/2 water and cover the lid and cook 5 min or 2 whistle.
  • Rasaj (Diamond flour in onion curry ) is ready to serve .

Onion Paste


Ingredeints.....................
  1. Onion-1
  2. Garlic- 2 to 3
  3. Dry whole chili- 3 to 4
  4. Clove-4-5
  5. Ginger- 1 inch
  6. Black cardomom- 2 to3
  7. Cumin Seeds- 1 tbsp
  8. Water- 1/2 small cup
Method..................
  • Add all ingredients in mixer and make a fine paste
  • Onion Paste is ready to use.

Veggie Wellington



Ingredients.................
  1. Puff Pastry- 1

For Pattie...........
  1. Boiled potato- 2
  2. Green chopped chili- 1
  3. Red chili powder- 1/2 tbsp
  4. Salt to taste
  5. Coriander powder-1/2 tbsp
  6. Garam masala-1/4 tbsp
  7. Spring onion chopped- 4 tbsp
  8. Oil for fry- 4tbsp

For Mushroom saute................
  1. Chopped mushroom- 1cup
  2. Chopped bell pepper- 3 tbsp
  3. Grated ginger- 1/2 tbsp
  4. Grated garlic-1 tbsp
  5. Curd-3 tbsp
  6. Salt to taste
  7. Turmeric powder-1/ 4 tbsp
  8. Coriander powder-1/4 tbsp
  9. Garam masala-1/4 tbsp
  10. Red chili powder-1/2 tbsp
  11. Olive oil- 3 tbsp
Method..................
  • For Pattie---- Mix all ingredients( salt, coriander powder, gram masala, green chili) and mash with boiled potato, make a round Pattie and fry from both sides golden brown.
  • For mushroom saute- Heat the wok add olive oil, now add grated ginger,grated garlic, green chopped chili and fry about 1 min, then add chopped mushroom, chopped bell pepper salt and all dry spices and fry about 2 min then add curd , again fry 2 min, if you want to add some drop of tomato ketchup (optional)that's it

  •  Pre- heat the oven 200oc.............. Now take a small part of puff sheet and roll out 6 inch circle and cut the sides like a picture.
  • Now place a Pattie in the middle and place the mushroom saute on it and fold or wrap the puff sheet like a picture.




  • Now place your pattie in baking greased tray  and cook both sides about 4 min or till gloden crushed.
  • Veggie Wellington is ready to serve with tomato ketchup .
