Mustard Okra Curry (Bhindi curry)


Ingredients...............
  1. Okra- 200gm cut 2 inches size
  2. Chopped onion- 2tbsp
  3. Onion paste- 1cup http://noopurnikhil.blogspot.com/2011/02/onion-paste.html
  4. Black mustard seeds- 1tbsp
  5. Tomato- 1/2
  6. Turmeric powder- 1/2 tbsp
  7. Salt to taste
  8. Yellow mustard seeds paste
  9. Water- 1 cup
  10. oil- 10 tbsp for fry okra
Method.................
  • Heat the wok add oil and fry okra/bhindi till brown and transfer to other vessel.
  • Add more 5tbsp oil and add chopped onion mustard seeds and fry 1 min then add onion paste and chopped tomato, salt and turmeric powder , fry about 3 min till golden brown.
  • After 3 min add mustard seeds paste and fry again 2 min then add okra.
  • Fry 2 min and now add water , cover the lid and cook about 5 min.
  • Okra mustard curry is ready to eat.

Mustard Potato


Ingredients....................
  1. Black split peeled lentil (Urad daal)- 2 tbsp
  2. Mustard seeds- 1 tbsp
  3. Boiled potato- 4medium
  4. Green chopped chili- 2 tbsp
  5. Sliced onion- 2 tbsp
  6. Green frozen peas- 1/2 cup
  7. Turmeric powder- 1/2 tbsp
  8. Coriander powder- 1 tbsp
  9. Mango powder- 1/2 tbsp
  10. Vegetable Oil- 8 tbsp

Method..............
  • Heat the wok add oil, after 2 second add green chopped chili, mustard seeds and /black split lentil/urad daal , fry till brown then add sliced onion and fry again 2 second.
  • Now add diced boiled potato and frozen green peas fry about 1 min then add all dry spices like coriander powder, mango powder and turmeric powder and fry again 2 min.
  • Mustard potato is ready to eat.

Green Peas Stuffed Flat Bread


Ingredients..............

For dough...........
  1. Plain flour- 1cup
  2. Wheat flour- 1-1/2cup
  3. Oil- 10 tbsp
  4. Water-1 cup
  5. Salt- 1 tbsp
For filling.........
  1. Green peas crushed- 1 cup
  2. Coriander powder- 1 tbsp
  3. Garam masala- 1/4 tbsp
  4. Mango powder- 1/2 tbsp
  5. Cumin seeds- 1tbsp
  6. Salt to taste
  7. Oil- 6tbsp
  8. Grated ginger- 1tbsp
  9. Chopped green chilli- 1tbsp
  10. Red chili powder
Method...........

For Making dough.............
  • Mix flour, salt and water together to make soft dough (if the dough is hard add a little more water). I like mixing the dough by hand.
  • Knead the dough for a few minutes on a lightly greased surface to make smooth and pliable dough.
  • Set the dough aside and cover it with a damp cloth. Let the dough rest for at least ten minutes.
For making filling........
  • Heat the wok add oil , after 2 sec add cumin seeds, green chopped chili, grated ginger and fry till light brown.
  • Now time to add crushed green peas and add all dry spices like coriander powder, garam masala, mango powder, salt, red chili powder and mix it well and fry about 5 min till dry.



Method..............
  • Roll the dough into 3 inch diameter circles. Place the green peas mixture in the center. Seal by pulling the edges of the rolled dough together to Make a ball. To make it easier to roll the balls, first roll them in dry whole-wheat flour
    Lightly press the ball on the sealed side and keep it on the topside when rolling. Roll the ball light handed in to 6-inch circles. Whenever the dough sticks to the rolling pin or rolling surface, lightly sprinkle dry whole-wheat flour on both sides of the semi-rolled paratha/ flat bread.


  • Heat the Flat pan /tawa on medium high. To check if the flat pan is hot enough, sprinkle a couple of drops of water on it. If the water sizzles right away, the pan is ready.
  • Place the paratha/flat bread over the pan. After a few seconds you will see the paratha /flat bread change color and puff in different places.
  • Then flip the paratha/ flat bread over. You should see some golden-brown spots on the topside. After a few seconds, spread 1 teaspoon of oil on the paratha/ flat bread. Again, flip the paratha / flat bread and lightly press the puffed areas with a spatula.

  • Flip again and press with the spatula making sure the paratha / flat breadis golden-brown on both sides.
  • Parathas/ flat bread can be served with tomato chutney, plain yogurt, any gravy/ subji, or spicy pickle.

Boiled Lemon Potato


Ingredients.............
  1. Lemon- 1/2
  2. Coriander leaves- 1 tbsp
  3. Chili flacks- 1 tbsp
  4. Salt (optional rock salt) to taste
  5. Boiled sliced potato
  6. Cumin powder
Method.............
  • Mix all ingredients Carely (because potato round sliced can be break) and enjoy.

Cottage Cheese Balls with Thick Gravy (Malayi Kofta)


Ingredients................

For Cottage cheese balls (kofte)...........
  1. Boiled potato- 5 small mashed
  2. Corn Flour- 1 cup
  3. Salt - 1/2 tbsp
  4. Grated cottage cheese (paneer)- 1/2 cup
  5. Oil for fry- 1 cup
For filling...............
  1. Grated cheese- 1/4 cup
  2. Raisins- 10-15
For Gravy.............
  1. Onion Paste- 1 cup http://noopurnikhil.blogspot.com/2011/02/onion-paste.html
  2. Oil- 7 tbsp
  3. Tomato paste- 1/2 cup
  4. Cashew paste- 1/4 cup
  5. Thick Cream (milk optional)- 1/4 cup
  6. Red chili powder- 1/2 tbsp
  7. Coriander powder- 1 tbsp
  8. Mango powder- 1/4 tbsp
  9. Turmeric powder- 1/2 tbsp
  10. Kasoori methi- 2 tbsp crushed
  11. Corn starch- 1 tbsp dissolved in water
  12. Water- 1 cup(according to you)
Method................
  • Mix all ingredients like - boiled potato, salt, grated cheese (paneer) and corn starch, make a smooth dough, now take a small ball and fill in middle raisin and cottage cheese(paneer) and roll it like a oval shape.
  • Heat the wok and pour 1 cup oil and fry all cottage cheese balls(Kofte) till golden brown.
  • Now heat the wok again, add 7 tbsp oil after 1 min add onion paste, Fry bout 2 min then add tomato paste and fry again 3 min.......
  • Now add dry spices like coriander powder, mango powder, turmeric powder, red chili powder and fry till thick now add cashew paste, kasoori methi, corn starch paste and cream......
  • After 2 min add water and cover the lid, cook about- 5 min or 2 whistle.
  • Place the cottage cheese balls in serving bowl and pour the ready gravy on it and keep in microwave for 1 min.
  • Now leave it for 1/2 hour Cottage cheese balls with thick gravy is ready to serve .
