Ingredients...............................
- Plain flour- 300gm
- Egg- 4
- Sugar-300gm
- Mixed fruit- 150gm soaked in warm water
- Vanilla essence- 2tsp
- Vegetable oil- 150ml
- Baking pwd- 1tsp
- Soda-bio -Carbonate- 1/2tsp
- Milk- 10tsp
Method................................
- Pre-heat oven 200o C, separated egg white and egg yolk, whisk egg white for 5min.and keep aside.
- Take a bowl ,add sugar+oil+milk+egg yolk 4 and whisk for 2min or till thick custard.
- Now add plain flour+ baking soda+soda bio-carbonate+vanilla essence and fold them properly
- Now add fruits and egg white fold again.
- Now prepare cake tin place baking paper and pour batter , now place in oven for 40-45 min on 180o C,time to time you have to check with toothpick or fork , when it comes clear that means cake is ready.
- Christmas Fruit Cake is ready to serve.
