Indian Machar Jhol (Sardines Mustard Curry)



Ingredients...............
  1. Chopped tomato-1
  2. Yellow mustard seeds paste- 4 tbsp
  3. Red chili powder- 1 tbsp
  4. Turmeric powder- 1 tbsp
  5. Asafoetida- 2pinch
  6. Tamarind Water- 1/2 tbsp tamarind paste mix in 5 tbsp water
  7. Coriander leaves for garnishing
For Marination............
  1. Sardines- 6
  2. Salt- 1 tbsp
  3. Turmeric powder- 1 tbsp

For Tempering...............
  1. Black Mustard seeds- 1 tbsp
  2. Fenugreek seeds- 1/2 tbsp
  3. Nigella sativa seeds (kalonji)- 1/2 tbsp
  4. Mustard oil- 7 tbsp
For Onion Paste.................
  1. Onion-1
  2. Green chili-2
  3. Coriander seeds- 3 tbsp
  4. Cumin seeds- 1 tbsp
  5. Garlic-2
  6. Ginger-1 inch
  7. Black Ppper- 10- 15
Method....................
  • Heat the wok high heat and pour mustard oil and spread oil all over the wok, add marinated sardines fish and fry till light golden brown from both side.
  • Now add Nigella seeds (kalonji), fenugreek seeds, black mustard seeds in oil and fry 1 min then add onion paste and fry about 5 min, when paste turns thick add Asafoetida (heeng).
  • After 1 min add chopped tomato, turmeric powder and red  chili powder fry about 2min then add salt to taste, now add yellow mustard  paste and fry again 5 min sprinkle coriander leaves.
  • Now time to add tamarind water and 1 cup plain water and cook for 5 min or start boiling, after 5 min add fried Sardines fish cook again 5 min.
  • Sardines Mustard curry is ready to eat .
