Ingredients.................
- Uncooked Rice - 1Bowl (soaked in 20 min)
- Vegetable oil- 4 tbsp
- Black cardamom- 2
- Dry Curry leaves- 2
- Food colour- 3 tbsp
- Dry fruits sliced mix(raisins, cashew, almond, walnut)- 1 small bowl
- Dessicated Coconut- 8 tbsp
- Saffron- 2 pinch
- Scent(kevda)- 1/2 tbsp
- Boil water in a big pan add saffron, food colour, black cardamom, curry leaves and some drop of oil and wait about 4 min, now put rice in the boiling water and cover the lid, after 4 min check if rice cooked 3/4 then off the heat.
- Drain all the extra water and wash it in running water slowly.
- Heat the pan (but remember heat should be very very slow like minimum) and place curry leaves at the bottom(it helps to protect rice burning), now strat the layers........................
- 1-- spread rice about 12 tbsp evenly on curry leaves.
- 2-- Spread dry fruits on it according to you.
- 3--Spread dessicated coconut evenly on it about 5 tbsp
- 4--Spread sugar about 5 tbsp
- 5-- Spread oil 3-4 tbsp, then add again rice spread evenly on it.
- Follow these steps 2-3 times according to you or how much quantity of rice.
- Cover the lid, then put on dum (steam)for 5 min on high heat. Then put it on very slow heat about 15 min.
Zarda is ready to eat.

- Boiled Rice- 1 Bowl
- Spring Onion sliced-1/2 cup
- Onion sliced- 1/2 cup
- Tomatoes-1/2 cup
- Green Peas- 1/2 cup
- Mushroom Diced-1 cup
- Green chili -2 tbsp
- Coriander leaves - 2 tbsp
- Vegetable oil- 4 tbsp
- Green Cardamon-2
- Fennel Seeds- 1 tbsp
- Dry curry Leaf- 1
- Clove-3-4
- Cinnamon-1 inch
- Salt to taste
- Heat the oil, low medium heat and add (curry leaf, green cardamom, clove, fennel seeds, cinnamon) and fry about 1 min.
- Add Onion and green chili and fry again 1 min, till onion turn golden brown......
- Add tomato, mushroom and green peas fry about 4 min.
- After 4 min add spring onion and fry 1 min then add boiled rice and mix well.
- Fry 4 min again and sprinkle salt on it ,that's it.
- Now rice is ready to serve.
