Ingredients..............
- Grated Paneer(cottage cheese)- 100gm
- Grated Boiled Potato- 1 small
- Coriander seeds- 1 tbsp
- Cumin seeds- 1 tbsp
- Fennel seeds- 1 tbsp
- Moong daal- 1 tbsp
- Red chili powder- 1tbsp
- Chopped green chili- 1 tbsp
- Mango powder- 1tbsp
- Garam masala-1/4 tbsp
- Salt to taste
- Vegetable oil- 2 cup(for frying)
- Vegetable oil- 4 tbsp (for dough)
- Wheat flour- 1 cup
- Plain flour- 1/2 cup
For Filling..........
- First heat the wok, pour 3 tbsp oil and add cumin seeds coriander seeds, fennel seeds, green chili and moon daal fry about 2 min or till golden brown.
- After 2 min add paneer(cottage cheese), boiled grated potato and all dry spices(red chili powder, mango powder, garam masala, salt) fry about 3 min or till golden brown, filling is ready .
- Sift flour into a mixing bowl, add vegetable oil, salt and mix with your hands until a crumbly mixture is achieved.
- Add the water and mix until you have soft dough. Now knead the dough for 10 minutes and cover with cling film and leave it for 1 hour.
Making Kachori............
- Knead the dough again and divide it into 8 equal portions, Form each portion into a ball. Roll the ball out on a floured surface to make a circle approximately 2 inches in diameter.
- Take one of circle, pour 1 tps filling in middle of circle and seal the edge now make a ball again. With a little oil on your fingers. Press the ball to flat like peda then roll the ball out on a floured surface make a circle approx-4 inches in diameter
- Paneer kachori is ready to eat.
Now heat uo the wok and pour 2 cup of oil after 4 min add the kachories and deep fryer until golden brown both sides
