Rushil is my son. It was his 1st B'day on 1st July,2010. On this occasion, I made a Coffee & Walnut cake for him.
Ingredients....................
For cake
3 eggs
225 gm. self raising flour
225 gm Unsalted butter
225 gm caster sugar
1 tsp- baking powder
50 ml- black strong coffee
70gm walnut
For Butter Cream Topping
125gm Unsalted butter
200gm Icing sugar
50ml strong Coffee
12 Walnut Halves
Preparation.....................
Pre-heat the oven 180 C / 350 F
In a bowl, beat the butter and sugar together until very light and pale.
Add the eggs to the butter and sugar mixture, beating well to completely incorporate each egg.
Add the coffee to the mixture and stir well
Add the flour, baking powder and walnuts and stir well to completely combine
Spoon the cake mixture into two lined and greased 8in cake tin
Transfer to the oven to bake 20-30 min until a skewer inserted into the center of the cake comes out clean and the cake is golden brown.
Remove the cake from the oven and leave to cool on a wire rack
For the butter cream topping, beat the butter and icing sugar together in a small bowl until pale and light
Add the coffee and mix well
Spread the butter cream over the top of each cake, then place one cake on top of other cake
Decorate the top on the cake with the walnut halves and serve in generous slice
