Roasted Seeds stuffed Aubergine with mozzarella, Garlic sauce


Ingredients..............................

  1. Baby Aubergine- 7-9
  2. Corriander seeds- 4tsp
  3. Fenugreek seeds- 1/2tsp
  4. Fennel seeds- 2tsp
  5. Black Musard- 1/2tsp
  6. Onion seeds- 1tsp
  7. Salt- 1tsp
  8. Turmeric Pwd- 1tsp
  9. Red chili pwd- 2tsp
  10. Mango pwd- 1+1/2tsp
  11. Mustard Oil- 4tsp
  12. Mozzarella cheese- 10-15 small diced 

Method.............................
  • Heat the wok, add coriander seeds and roast after 1/2min. add fennel seeds roast 1/2 min, now add mustard seeds and fenugreek seeds and roast again 1 min or doesn't till comes aroma, transfer to Mixer and grind them, now sieve and take fine powder


  • Then add salt, turmeric pwd, mango pwd and red chili pwd +2tsp oil and mix them well and keep a side.

  • Wash the baby aubergine, slit them and fill the mixer inside, now heat the pan pour some drop of oil , place stuffed baby aubergine on pan and cover them for 1min on low medium heat.




  • After 1min turn them another sides and cover them again, cook for 1min.




  • Roasted Seeds stuffed Aubergine with mozzarella, Garlic sauce is ready to serve.
